- What is it?
Momone, also spelled momoni, is one of Ghana’s famous preserved fish ingredients. It is made from various fish, but also squid and octopus occasionally, by gutting and washing the fish then rubbing them with salt before packing them in layers. The salted fish are left to ferment for about a week. Then, they are dried in the hot sun. The result is a specialty used in many recipes.
- How should I use it?
In Ghanaian recipes, momoni is often roasted or fried in some oil before incorporating into the other ingredients for a fortified, fishy sauce. It can be added to stews, soups, and sauces to eat with rice dishes along with ground red pepper, tomato, and onion. Starchy foods like rice, potatoes, yams, etc., go well with the salty, flavorful momoni.
