- What is it?
Okra is not unfamiliar to many, but usually not in its dehydrated form. In West Africa, dried okra can often be seen chopped up or sold whole in markets. Goldleaf’s partner farm in Ghana has sourced its dried okra from Burkina Faso, and shared with us. It can be eaten as a snack or used in cooking. The oft-heard complain of okra being slimy is made irrelevant by the drying process. All of the flavor and health benefits of the vegetable are still here without the slime.
- How should I use it?
This dried okra can be tossed in a little oil, salt, and spices for a crunchy snack. Or, it can be added to stews much like Cajun cuisine does in the U.S. In West Africa, it is often paired with seafood or beef and other vegetables such as carrots, potatoes, peppers, and more.

Okra, whether dried or not, is high in nutrition while also being very low-calorie. In 100 grams of okra, there are only 30 calories. But in those few calories, there is vitamin B6, beta carotene and other antioxidants, folic acid, and bountiful fiber. Okra is therefore great for your eye, skin, respiratory, and even mental health. Recent studies are looking at dried okra’s benefits in helping to manage blood sugar for those with diabetes.
